I've learned I can slap together just two ingredients from the freezer or canned and make a super easy and healthy lunch and not have to worry about having pre-cooked meat ready or cooking meat (but still meet protein and fiber needs for the day)!
Microlunch #1 (from frozen, super easy)
Handful of shelled edamame, frozen
Handful of {insert vegetable, I prefer broccoli}, frozen
Could be: broccoli, green beans, asparagus, zucchini, mushrooms, bell peppers, or Brussels sprouts
Heat oil or butter in a pan. Put in these two ingredients together. Stir-fry, and add salt / paprika / garlic powder. Cook 10-15 min!
Microlunch #2
Handful of healthier rice (I like a rice medley mix)
Handful of {insert vegetable, or insert bean, like black beans}
Cook up rice and warm up beans, then combine and add whatever spices.
Microlunch #3
Handful of canned beans (I like white beans, like cannelini and great northern. Black beans work if needed though.)
Handful of {insert vegetable, I prefer spinach}, frozen
Could be: White beans + zucchini, broccoli, mushrooms, kale, OR black beans + frozen bell peppers + taco seasoning
Heat oil or butter in a pan. Put in these two ingredients. Again, stir-fry to your preferred doneness and add a couple spices along the way!
Microlunch #4
Handful of chickpeas, I prefer toasted or roasted first, which adds time
Handful of {insert vegetable, I prefer cauliflower}, frozen
Could be: carrots, broccoli, green beans, asparagus, zucchini, mushrooms, bell peppers, or Brussels sprouts
Heat oil or butter in a pan. Do like we did in the first two lunches above!

Handful of lentils, cooked first - so might take a little more time than the others

Handful of frozen meat that thaws fast and still tastes good (like shrimp)
Handful of {insert vegetable, I prefer asparagus}, frozen
Could be: idk, still gotta try other things here
