4 cups chicken stock or broth
2 chicken breasts, cooked and shredded
1 can black beans
1 can diced tomatoes
1 cup frozen corn
1 small can of green chiles
1 can enchilada sauce (I use about 3/4 of the can)
1/4 cup cilantro
1 cup shredded cheese of choice
Tortilla chips for scooping
Optional: avocados and black olives
Heat chicken broth in a large pan.
Add chicken, beans, tomatoes, corn, green chiles, enchilada sauce, and cilantro.
Let simmer for 15 minutes.
Serve with tortilla chips and optional toppings!
