2 large boneless, skinless chicken breasts
1 teaspoon kosher salt
1/2 teaspoon sugar
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
2 large eggs
1 tablespoon Dijon mustard
1 cup all-purpose flour
2 cups finely crushed panko breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried parsley
2 tablespoons finely grated Parmesan, optional
Vegetable or canola oil, for shallow frying
Lemon wedges, for serving
1 large English cucumber, thinly sliced
1/4 small red onion, very thinly sliced
3 tablespoons rice vinegar
1 teaspoon sugar
1/4 teaspoon kosher salt

1 teaspoon olive oil

Slice each chicken breast horizontally into two thinner pieces.
Place the chicken between pieces of plastic wrap or parchment and pound gently until each piece is about 1/4 inch thick.
Combine 1 teaspoon kosher salt, sugar, black pepper, and 1/2 teaspoon garlic powder. Season both sides of the chicken.
Let the chicken sit for about 30 minutes while you prepare the other components.
Combine the sliced cucumber and red onion in a bowl.
Stir together the rice vinegar, sugar, salt, and several grinds of black pepper.
