2 large boneless skinless chicken breasts
2 tablespoons Cajun Seasoning (or really just your favorite dry rub)
3 tablespoons corn starch (or however much to cover the chicken)
2 tbsp vegetable oil for frying
Take chicken out 30 min before cooking.
Season each side with the seasoning. Rub cornstarch all over the surface of each side (cornstarch gives it a delicious crispy texture and prevents it from sticking to the skillet).
Heat oil in a large skillet over medium-high heat. Sear the chicken in batches for 5-8 minutes per side (depending on thickness), until a gold-brown crust has developed (no deep color = no flavor!).
