2 boneless skinless chicken breasts
¾ cup BBQ sauce (sweet or smoky style works best)
2 tablespoons adobo sauce (from canned chipotle peppers in adobo)
1 tablespoon brown sugar
1 Tablespoon apple cider vinegar
1 teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
Black pepper to taste
1 tablespoon butter (optional, but makes it richer)
Put the chicken breasts into a 3 quart slow cooker (anything bigger will need more of the ingredients to cover all the chicken).
In a bowl, mix:
BBQ sauce
adobo sauce
minced chipotle pepper
brown sugar
vinegar
smoked paprika
garlic powder
onion powder
salt and pepper
Pour the sauce over the chicken and turn the chicken once so it’s coated.
Add the tablespoon of butter on top.
Cook on low for 4 hours.
Shred the chicken directly in the crockpot with two forks.
Let it sit in the sauce another 10–15 minutes after shredding so it absorbs flavor.
Toast the buns in the toaster (hit the Bagel button) and make some chicken burgers.
Don't put frozen chicken in the crock pot, since it'll sit in the food danger zone temperature range for too long and it's risky!
I added just a little barbacoa sauce, and it was amazing.
Don't skip on the crispy fried onions! It was the perfect topping.
