2–3 lb chicken drumsticks and wings
1 tbsp baking powder (this is the secret to crispy skin)
1 tsp kosher salt
1 tsp garlic powder
1 tsp smoked paprika
½ tsp black pepper
½ tsp Onion Powder
(Glaze) ½ cup BBQ sauce (your favorite)
(Glaze) 3 tbsp honey
(Glaze) 1 tbsp butter
(Glaze) 1 tsp apple cider vinegar
(Glaze) ½ tsp smoked paprika
Optional heat: ¼–½ tspancho chili powder or 1 tspchili crisp or a few drops hot sauce
Pat the wings and drumsticks very dry with paper towels.
Season Wings
Put them in a large bowl and toss with: baking powder, salt, garlic powder, smoked paprika, pepper and onion powder.
Arrange Wings
Arrange on a wire rack over a sheet pan so air can circulate.
Heat Oven
Heat oven to 425°F.
Bake Wings
Bake 40 minutes, flipping halfway through.
Cook Wings
Cook until: skin is deep golden And internal temp reaches 175–185°F(dark meat gets more tender at higher temps).
Melt Butter
In a small saucepan over medium-low heat, melt butter.
Add Glaze Ingredients
Add BBQ sauce, honey, vinegar, and paprika.
Simmer Glaze
Simmer 3–5 minutes until glossy and slightly thickened.
Toss Wings
Toss the hot chicken in the sauce in a bowl. Serve immediately.
