Avocado oil
Street yellow corn tortillas (much better than flour tortillas)
Frozen breaded shrimp (I prefer the ones from Trader Joe's)
Mango pico de gallo (also found at Trader Joe's)
Toppings: Shredded lettuce, cubed avocado, diced tomatoes, lime to squeeze on top
1 avocado, sliced
1 lime
Salt
Pepper
Sprinkle of chile powder
Sprinkle of garlic powder
¼ cup Greek yogurt
Sriracha
Warm up oil in a small saucepan on medium-low, and fry each tortilla for 10 seconds on each side—this makes it pliable. As you go, sprinkle each one with a pinch of salt and a few shakes of chile powder.
Assemble the tacos: put about 4 shrimps in each tortilla.
Bake for ~13 minutes at 375°.
While they bake, prepare crema by mixing Greek yogurt with a tablespoon of lime juice, a pinch of salt, a pinch of garlic powder, a few drops of sriracha.
Then, prepare avocado mash using ½ the avocado, a squeeze of lime juice, a pinch of salt, and a pinch of garlic powder.
Squeeze a few drops of lime juice inside the tacos on the shrimp.
Spread avocado mash inside the tacos.
Drizzle the crema over the shrimp inside.
Top with pico, lettuce, and avocado.
